“Chicken Cooked in the Oven with Barbecue Flavor”

No backyard? No backyard? You can enjoy the sweet, sticky goodness of barbecued meat without a grill by using a spice rub and your favorite barbecue sauce from the store. You’ll need to be patient to get the skin crispy and the meat tenderized. ).

Ingredients
Four servings

Skin-on, boneless chicken thighs or drumsticks in pieces (about 3 pounds)

3

tsp. kosher salt, plus more

1 1/2

tsp. Light brown sugar

1 1/2

tsp. Ground cumin

1

tsp. Freshly ground black pepper plus more

1

tsp. sweet paprika

1

tsp. Garlic powder

2

Medium onions

2

Tbsp. extra-virgin olive oil

1

Tbsp. apple cider vinegar

1

Cups of store-bought BBQ sauce

Preparation
Step 1
Set a rack on the top third of the oven and preheat it to 350 degrees. Dry 8 chicken legs and/or thighs with paper towels. Transfer to a medium-sized bowl.

Step 2
Salt, 1 1/2 tsp. salt, 1 1/2 tsp. Brown sugar, 1 1/2 teaspoons cumin, 1 tsp. pepper, 1 tsp. In a small bowl, combine 1 tsp. Garlic powder in a small dish. Sprinkle the entire spice mixture over the chicken in a bowl. Stir with tongs, coating all pieces.

Step 3
Peel and halves 2 onions from the root end. Place the onion cut side down on a cutting board and thinly slice it lengthwise.

Step 4
Cover a baking sheet that has a rim with foil. Add onion to baking tray and drizzle 2 Tbsp. Add more salt and pepper. Toss in the oil.

Step 5
Spread the onion mixture over a baking sheet, and then place chicken legs skin-side up on top.

Step 6
Roast the chicken in the top rack for 40-45 mins until the skin has been rendered and the meat is tender to the bone. On broiler, continue roasting until skin of chicken is crisp and blistered in some spots. This may take 2-4 minutes depending upon the power of your broiler. Let the chicken rest for 5 minutes in order to let the juices settle.

Step 7
Stir 1 Tbsp. Use a pastrybrush to mix 1 Tbsp.

Step 8
Tongs are used to turn the chicken pieces. Push the onions to the center of the baking sheet in a pile. Brush a generous amount of barbecue sauce on the surface of the chicken. Arrange chicken on top of onions using tongs. Broil sauce until it is caramelized, about 2-4 minutes.

Step 9
The skin side should face up. Remove the baking sheet and turn the chicken once more, but this time with only one sauced side. You will probably not use the entire amount of barbecue sauce. Broil the chicken on top rack until the skin is bubbling in places and has a charred appearance, approximately 4 minutes.

Step 10
Rest 5-10 minutes. Rest of barbecue sauce mixture can be served over chicken and onions.
