Lime Jelly Salad: A nostalgic and innovative dessert

Ingredients

  • Lime-flavored Jello powder (6 ounces)
  • Water (1 cup)
  • Canned pineapple, juice reserved (20 ounces, crushed)
  • Pineapple juice (1 cup, from can)
  • Cream cheese (8 ounces, softened)
  • Lemon-flavored soda (such as 7-Up, 1 cup)
  • Frozen whipped cream (8 ounces, thawed)

Optional additions

  • Chopped walnuts or pecans (1 cup)
  • Small marshmallows (2 cups)
  • Cream cheese (1 cup)
  • Canned oranges (1 cup)

Steps

1. Prepare the pan

Lightly spray a 9×13-inch baking pan with nonstick spray and set aside.

2. Dissolve the Jello

Combine 1 cup water with 1 cup pineapple juice and heat until boiling. Pour into a medium bowl and add the Jello powder and stir until completely dissolved. Let cool for about 10 minutes.

3. Whip the cheese

Put the softened cream cheese in a large bowl and beat with an electric whisk until smooth and free of lumps. Scrape the bowl several times to make sure there are no lumps.

4. Mix the jelly and cheese

Slowly pour the cooled jelly into the cream cheese and stir to combine.

5. Add soda and pineapple

Slowly pour in the lemon soda and continue stirring to combine. Add the crushed pineapple and stir until combined.

6. Mix the cream

Add the thawed whipped cream and gently stir until smooth. You can add optional ingredients at this point if you like.

7. Refrigerate to set

Pour the mixture into the prepared mold, cover with plastic wrap and refrigerate for at least 4 hours until completely set.

Tips and variations

  • The cream cheese needs to be whipped thoroughly to avoid a grainy texture.
  • Only use canned pineapple to avoid the enzymes in fresh pineapple affecting the solidification of the jelly.
  • Can be made one day in advance for better flavor.
  • It is not recommended to freeze it, the taste will deteriorate after thawing.
  • The remaining salad can be refrigerated for 5 days.
