“Christmas Stuffing with a Vegan Twist: Oven-Baked Delights for Plant-Based Diners”

This gluten-free version of the classic Christmas stuffing recipe will be a staple in your Christmas menu this year. It’s also vegan! It’s bursting with flavors of mushroom, thyme and is sure to please your guests.

Ingredients
2 tbsp olive oil
1 large onion, diced
Crush 3 cloves garlic
Wild mushrooms mixed 350g (12 oz).
Closed cup mushrooms 400g (14 oz).
Fresh Thyme, 1/2 bunch
Pecans and hazelnuts, 100g each (3.5 oz).
Fresh flat-leaf Parsley, 1 bunch
25g (1 oz) dried porcini
1/2 cup cooked quinoa
Gluten Free Bread Crumbs
Half a cup of almond meal
100g (3.5 oz) pecans, crushed
2 tbsp
Nutritional yeast

Season with salt and pepper
Method
Preheat oven 350oF (180oC).
Sauté onion, garlic and mushrooms.
Add cooked quinoa and chopped nuts. Parsley, thyme or porcini.
Mix almond meal, pecans crushed and nutritional yeast in a small bowl.
Spread the mushroom mixture on a dish, and then top it with almond crumbs.
Bake for 15-20 minutes or until the top is golden brown.
